Preparation
Rub the meat thoroughly with a paste of garlic, salt and cumin to cover all of the meat. If possible leave over night to let the meat absorb the paste. Grease a pan with lard. Brown the meat well from all sides at 180° C. Cover well with cut onions. Pour on the beef broth at regular intervals and roast at 160° to 180° for 1 to 2 hours. When the roast is ready, put some flakes of butter to boost the flavour.
